season like a brisket and smoke low until it hits about 170 then i put them in trays with some beef stock and worcestershire and cover with foil and braise until they hit about 203-205.
ill use that for beef sandwiches/beef dips, over mashed potatoes with gravy and veggies, in a stir-fry or with a good ramen. The possibilities are endless!

Id do a braised pot roast in the oven over a miropoix and then either rice, or roasted, baked or mashed potatoes if i were you.

I made a pot roast a few days ago. I just browned the sides salt and peppered it. Put in the crook pot on low for 9 hours with a chopped onion and four chopped jalapenos. Added carrots and tatters a couple hours before it was done. It was good.
No salt or pepper? Bit of water in there? Do I have to go there and show you how?
I figured the jalapeños would provide enough flavor.
Came out good. Definitely using less jalapeños next time though. Using the whole jar was kinda overkill.
My stomach got fuuuuucked up at work today. Gonna have to cut back on the jalapeños next time. Will definitely add salt and pepper and some granulated garlic too. Aside from the pain in my gut, it’s delicious.
Haha i guess “large jar” is very subjective.
