A lot of good options when it comes to bad ass dudes, especially when it comes to old school fighters.

All of the guys in this thread would be on the list. Also, BJ comes to mind. He fought Renzo, Machida, Hughes, Rodrigo…. a lot of guys above his weight class

Yuki Kondo is worth mentioning. Despite being under 6 foot and walking around smaller than a natural middleweight, the dude won the openweight title in Pancrase. He fought guys from the UFC like Tito, Filho, Matyushenko…. Also fought PRIDE guys like Igor, Wanderlei, Barnett. Even holds wins over Schilt, Funaki, and DeLucia. Dude fought everyone.
